Smoked Gouda Mac-N-Cheese

Gonflayed's Smoked Gouda Mac-N-Cheese:

This recipe feeds 10-12 people. If cooking for a lesser amount of people, cut the recipe’s ingredients in half and follow the same instructions.

If you do not have a pellet grill or smoker, you can enjoy this recipe by following the same instructions and cooking it in your oven. It won't have the smoke flavor, but will still be just as delicious!

 Prep Time: 10 Minutes  |  Cook Time: 3-4 Hours  |  Total Time: 3.5-4.5 Hours

 Ingredients:

  • 24oz. Noodles (we use penne)
  • 3 Cups Heavy Whipping Cream
  • 1-1/2 Cups Whole Milk
  • 1 Stick of Butter, Salted (8Tbsp)
  • 2 Cups Shredded Gouda
  • 3 Cups Shredded Sharp Cheddar
  • 3 Cups Shredded Colby Jack
  • 8 oz. Cream Cheese
  • 2 Cups Ricotta Cheese
  • 2 Tbsp Gonflayed Steak Seasoning & Rub
  • 1/2 Tsp Salt (to taste)
  • 9"x12"x3" Aluminum Pan

 Instructions:

  1. Pre-heat your pit (or oven) to 350F.
  2. In a 5Qt pot, fill about halfway with water. Bring your water to a boil and then add in your pasta. Cook the pasta to about slightly al dente or halfway (you don't want it cooked all the way) and then strain the water.
  3. In the 9"x13" pan, add the noodles and all other ingredients (save 1 Cup of Sharp Cheddar & Colby Jack to the side to sprinkle on top later) and mix together.
  4. Cover the pan tightly with aluminum foil and place on the pit for 1 hour, do not touch.
  5. After 1 hour, give it a good stir, cover, and place back on the pit for another 30-40 minutes or until all ingredients have melted and mixed together.
  6. Once all ingredients are melted, give it a good stir and then sprinkle the remaining cheese on top. Place the pan back on the pit for about 15-20 minutes or until the top cheese has completely melted and browned a little on the edges. You do not want the noodles/mixture drying up.
  7. Remove the pan from the pit, set aside to let cool, and then enjoy!!
